Herbed LovebirdsSuggested Wine: Heron Hill Gaine White
1 package Perdue CornishHens
2 cups dry white wine
1⁄4 cup balsamic vinegar
1 tablespoon crushed garlic
1 tablespoon ground blackpepper
1 tablespoon dried rosemary
2⁄3 cup oil
8 fresh rosemary sprigs
Whisk wine, vinegar, garlic,pepper, dried rosemary andoil, blend well. Set aside 1 cupof marinade for basting. Addremaining marinade and hensto plastic zip-locking bag.Refrigerate for 30 minutes,turning occasionally.
Cut long green end from 2scallions and tear each lengthwiseinto 2 strips. Using strips,tie together 2 sprigs rosemaryand 2 scallions. Mince whitepart of remaining scallionsand add to reserved marinade.Place rosemary/scallion bouquetinto cavity of each hen.Bake at 350°F, occasionallybasting with reserved marinadefor an hour or untiljuices run clear. Meat thermometerinserted in thickestpart of thigh should reach180°F.
